Cupcakes on this gloomy Saturday

I've put my baker's hat on and baked two dozen cuppies, since my in-laws are arriving tonight! It has been a month since I've baked, and so I was eager to make some. I actually should have tried decorating the icing using a piping thing. Hmm. I should bake again soon so I could try that.

We're not done yet cleaning the whole apartment, but the rain's been pouring since early this morning.. lazy cleaner in me. I could only manage to bake the cupcakes, and make lunch :)

Next one macaron

So, recently I have been into baking .. or should I say sweet little things. The next one I want to try and make are French Macarons! I found a recipe in Paris Pastry's blog, which I could probably use. I can't wait! Maybe when my sister comes over I can have her take care of the little one for a while, while I make the delice!

How about that fondant?

Yesterday I made my first fondant!! Yes!! For some reason I have been obsessed with the thought of being able to do my own fondant, so I finally did my research some 48 hours ago, and then decided I would try. Well, it was quite successful if I may say so, given that I had only 45minutes to complete the whole thing. I had to make use of a ready made sponge cake though coz I was in a rush. The fondant was for my brothers who we were taking to the airport within the hour of making the fondant. Still. It was fun. I think some sort of like a therapy thingamathing.

So here is how I made it:

INGREDIENTS
Marshmallow bag
Water
Shortening
Icing Sugar/Confectioner's Sugar
Food colouring (optional)

UTENSILS
Mixing Bowl
Spatula
Rolling pin
Ziplock Bag

1. Grease all utensils, including hands, with shortening to avoid marshmallow sticking on it.

2. Microwave a big bag of marshmallows in a bowl for about 30 seconds at a time. Drop about 3 spoonful water in the bowl. Keep microwaving/adding water until a gooey consistency is reached.

3. Transfer the mixture onto a clean flat surface and knead the mixture while adding the sugar gradually. Do this until the mixture has a play-dough consistency (firm but not hard).

4. Take a portion of the blob, and keep what you wont be needing in a ziplock container. And then roll the remainder of the fondant into your desired shape. Should the fondant stick onto the surface, just add more sugar. Add food colouring if required. Just a tiny drop of colouring would go a long way. Knead the fondant again to attain the colour desired.

5. Put the fondant over the cake. Smoothen and make sure that the fondant and cake are firmly together. Pop air pockets with a pin and smoothen.

6. Trim the edges from the cake/fondant.

7. Decorate!

See, so simple! If I knew it was this simple I would have made my own wedding cake. Seriously!!

Now, I can't wait for Bella's 5th month celebration so I could make her her first fondant cupcake :)

P.S. Nope, I don't have all the time in the world, believe me this was squeezed during B's short nap!!! Yes, I hope I am turning into a supermum! :)

Cooking up

Well, for the past 25 years of my life I did not cook. The recent 7 years I now have. Tried. Really, truly tried. And, it's only recently that I admitted to this. Or maybe it's only recently that I have enjoyed cooking up a meal. Not that I am a good cook. If there was an award I could come up for myself in this department it is the most ambitious and persevering trying-hard cook.

When I was in Manila last month I had a a good thirty or so must eat food listed down. I was able to accomplish eating about 25 of it which was good enough (well, if only I had eaten street fishballs!!). One food which I got to eat  but did not really crave was : bibingka. I saw that in the mall they were selling the old style ones and I was wanting to buy them (but opted for dunkin donuts' munchkins instead-hihihi). So, one time when I had lunch with my mum at C2 in Shangrila I ordered their Bibingka souffle for dessert. And, it was heavenly!!! Seriously! Now, having been back in Sydney I can still savour the taste. I even googled a Bibingka Souffle recipe, which I hope to make soon! And, hopefully it would taste at least close to C2's. Bibingka Soufflé

4 c coconut milk
2 c sugar
4 whole eggs, beaten
1½ c cornstarch
4 pc salted eggs, chopped
Combine coconut milk and sugar. Slightly heat until dissolved.
Combine the cornstarch with half of the warm coconut milk. Put back into the mixture, cook until thick, stirring continuously.
Off the fire, temper the eggs into the mixture and cook until thick.
Set aside to cool. Add the salted eggs.
3 c egg whites
2 c sugar
6 tbsp cornstarch

For garnish:
1 tbsp queso de bola
1 tsp toasted coconut
Beat egg whites until soft peaks form. Gradually add sugar.
Fold in cornstarch and mix well. Fold in base to egg white mixture.
Pipe into buttered ramekins and sprinkle with sugar. Bake at 350º F.
Garnish with grated queso de bola and toasted coconut. Serve with Creme Anglaise on the side

Creme Anglaise:
2½ c fresh milk
½ c egg yolks
½ c sugar
2 tsp vanilla extract
Scald milk, combine sugar and egg yolks. Temper egg yolks mixture into the milk.
Cook until thickened, stirring continuously. Add vanilla.

Bibingkang Galapong
1½ k rice, soaked for three to five hours
8 whole eggs, beaten
1 tall can evaporated milk
1 c coconut milk
1 k sugar
½ c butter
, melted
¼ c + 2 tbsp baking powder
2 tsp active dry yeast
Topping:
Salted eggs or cottage cheese

Garnish:
Butter
Coconuts, fresh and grated
Drain rice. Add water one inch above the rice then grind very finely to produce thick consistency.
Blend all ingredients together. Strain if the mixture becomes lumpy. Let the mixture rest for about 30 minutes to one hour.
Pour about ½ c mixture in a banana-lined round bibingka pan. Top with salted eggs or cottage cheese or combination of both.
Cook in bibingkahan, charcoal or electric bibingka oven.
Spread each bibingka with butter. Serve with fresh grated coconut.
Yields 18-20 pieces

Banana Bread Recipe

I am soo excited to go on maternity leave. I will finally be able to concentrate doing the nursery, clean the apartment, put up our Christmas tree, and maybe even try baking this banana bread. I've been meaning to try really....


BANANA BREAD (from Taste.com.au)

Preparation Time 10 minutes

Cooking Time 45 minutes

Makes 10-12 slices

Ingredients
1 cup (150g) plain flour
1/2 cup (75g) self-raising flour
1 cup brown sugar
1 tsp ground cinnamon
125g butter, melted, cooled
2 eggs, whisked
3 ripe bananas, mashed
Method
Preheat oven to 180°C. Grease and line the base and side of an 11 x 21cm x 6cm deep (base) loaf pan.
Combine flours, sugar and cinnamon in a large bowl. Whisk butter and eggs together. Stir in banana. Spoon into prepared pan. Smooth the surface.
Bake for 45-50 mins or until a skewer inserted into the centre comes out clean. Set aside in the pan for 10 mins before turning out onto a wire rack. Serve warm spread with butter.

Hot Cross Buns


Today as I walked through the station the scent of Hot Cross buns lingered, I could almost taste it! These buns which come in flavours or justplain, happens to be a pastry popular at Easter. Of course coz of the "Cross". Okay I haven't really done my research on that but that's what my workmates said. To me, well, the original ones just are like cinnamon buns. But that's just me. And, I am not that fond of how it tastes like. I prefer Cinnzeo or Cinnabon back home.

Healthy change

I have never been the best at trying to live a healthy life. Well, until recently when I turned thirty. I decided it was time for a change. Now, I am more conscious about the salt that I put in our meals, I am trying to serve more vegetables in the table, and even trying to have at least two or three fruits a day! My work mate was even trying to convince me about the benefits of taking up a lemon diet. She said to have warm water with freshly squeezed lemon in the morning is good for one's health. Well, I told her it's quite difficult since I am not an early riser and my mornings are usually in a rush but I said I would try. At least the good thing is I am more knowledgeable about the good and bad food which I should and should not eat. Likewise, I know that there are good food supplements such as Beta Glucan which are out there to assist with having a healthy body.

Chatter, Wine and Lunch


Been a while since I've met someone new for the first time and actually think that we could be friends :) I guess as one gets older (for some), meeting real friends (potentially) can happen once in a blue moon or very rarely.

Anyway, I had lunch with my new NFF (new found friend) today, her name is Cat. I've been liasing with her through work for work for the past 4months or so. And we have planned to actually meet up and not just be 'penpals'. She's also from Manila, same as me, she migrated here a few years before I did.

Such a fun lunch we ended up staying longer than expected, asking questions about each other, talking about the past/present and future. Talking endlessly while sharing a bottle of wine for lunch! We talked about life, love, school, work, family, travel, other people, food, plans, etc. We realised we had a lot in common, yet had a lot of things different. All in an hour and half of meeting, no second was wasted! It was greatly enjoyed and we said we will catch up again soon. At the end of lunch we were both feeling sleepy(umm, a bottle of wine for lunch), but still had to work! Good thing it was friday! Time to unwind and welcome the weekend!

When was the last time you met someone for the first time? And you just knew that this was the first of many meetings with them. I miss my old friends in Manila, but I am happy to meet genuine new friends in Sydney.

Family and Food

Oh how I wish I was in Manila now spending weekly dinners out with my family, or going on out of town trips with them. Or, even just to spend at least a weekend with them once a month is enough for now. (hehe).


My family just loves trying the new restaurant in town. We live right smack in the middle of Ortigas Center that's why. Being one with the city is a way of life, a part of our system. Should I say WAS. But, really I know I will always be a city girl, anywhere or wherever I am.


Anyway, I am missing them at the moment. Start of a brand new year can possibly do that to one. On an early gloomy, quiet saturday it can. Maybe cause I am about to marinade our grilled pork lunch, and I am wishing I could have lunch out instead. But of course, going out for meals in Sydney is a luxury one should sparingly indulge in otherwise go broke. Or, maybe I just wish someone could clean dishes for me, or set the table. Not. These are probably just my way of missing family and home. And, the countless conversations we have over Japanese, Thai, Filipino, or whatever cuisine. Or, even just home prepared bread, adobo/etc flavour tuna in jar (? forgot what its called), salad, cabanossi, olives, cheese and wine. We were never conventional in this way as my mum is not a big cook although she claims to be. So, most of the time we have takeaway or eat out next door (at the mall).

Anyway, I have to do my porkchop now.

What is your favorite and most unusual food combination/eating habit?


I eat bananas with lemon and soy sauce.

I eat bacon with maple syrup.

I eat doritos and chocolate alternating one after the other.

I eat coconut jam with hotdog.

I eat Spam cooked in sugar!


I know they sound yuck, but it's just one of those things that makes a person different (or do you call the weird, hehe!). But, really some may be your comfort food. Or, something that you crave every once in a while. Or it may be something that you may have outgrown already.

I've heard some really, really (I'm making this sound less harsh) different food combos. What's yours? I promise I won't cringe at the thought of eating your *perfect* combination. You've read mine above.
